1 cup unsalted butter (2 sticks), room temperature
1/2 cup granulated sugar
1/2 cup dark brown sugar
1 egg
1/4 cup light corn syrup
1 teaspoon vanilla
3 cups old fashioned rolled oats
1 1/2 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
1 package milk chocolate chips
1/2 cup raw sugar
1 1/2 Tablespoons sea salt
- Preheat the oven to 375 degrees and grease several cookie sheets.
- Cream together the sugars and butter using an electric mixer.
- Add in the egg and beat until the batter is smooth. Add in the corn syrup and vanilla, beating until incorporated.
- In a separate bowl, whisk together the oats, flour, baking soda, and salt. Gradually add this dry mixture to the wet mixture, mixing on low until the batter comes together.
- Stir in the chocolate chips. Refrigerate the dough for 30 minutes.
- In a small dish, combine the raw sugar and sea salt.
- Roll the dough into 1-inch balls. Roll the balls in the sea salt mixture and place on the cookie sheet. Flatten slightly with the palm of your hand.
- Bake for 8-10 minutes, until the edges of the cookie are slightly golden. Allow to cool for 5 minutes on the baking sheet before transferring.
