Black Bottom Cupcakes



I love these things! They are dense and chocolately and chesecakey...perfection.

Ingredients
8 ounces chream cheese
1/2 cup sugar
1 egg
1/8 teaspoon salt

6 ounces semisweet chocolate bits
1 1/2 cups flour
1 cup sugar
1/4 cup cocoa
1 teaspoon baking soda
1/2 teaspoon salt
1/3 cup oil
1 tablespoon vinegar
1 cup water
1 teaspoon vanilla

Directions
Soften cream cheese and add sugar, egg and salt. Mix well with beater. Stir in chocolate bits. In separate bowl, combine all other ingredients. Mix well. Fill greased or lined muffin tins 1/2-1/3 full with chocolate mixture. Drip large teaspoonful of cream cheese mixture in center of each cupcake. Bake at 350 for 25-30 minutes or until white center is lightly browned. These don't need frosting.
